Can you make these with all purpose flour instead of pancake mix? I don’t usually buy it already mixed so I’m not certain what the difference is.

If they came out too hard, you cooked them too long. Your microwave might be stronger….just drop the cooking time. This recipe is tough. Microwaves aren’t like ovens….the cooking time can vary greatly.
