Tzatziki Sauce

- ½ cucumber grated
- ½ cup low fat greek yogurt
- Pinch of salt
- Pepper (to taste)
- 2 garlic cloves, chopped very fine or grated with microplane
- ¼ tsp lemon zest
- Juice of approx ½ a lemon (just squeeze by hand)
- Sprinkle salt on grated cucumber and leave for a few minutes, the salt will pull some of the moisture out.
- Squeeze the cucumber well over the sink to release all the juice.
- Place cucumber in bowl, add in other ingredients and mix until combined.
