Easy Lemon Chia Pudding

- 2 Tbsp chia seeds
- ¾ cup unsweetened almond milk (or milk of choice)
- 5 drops lemon stevia (I used NuNaturals) or 1 Tbsp lemon juice & 1 packet stevia
- In a bowl, mix together chia seeds with almond milk and whisk or mix well with a fork.
- Put in the fridge for at least an hour, until pudding has a chance to set.
- Once mixture has turned into a pudding-type consistency, stir in stevia, or lemon juice and stevia packet.
If you want a really thick pudding consistency, use ½ cup milk instead of ¾ cup.
