Lemon Bliss Balls

Ingredients
  • ½ cup coconut butter
  • ¾ cup puffed rice
  • ¾ cup whey protein, vanilla (I used Whey Gourmet)
  • 2 tsp lemon extract
  • ¼ cup honey (I used Nature's Hollow sugar free honey)
  • 1 tsp lemon zest
  • 2 Tbsp lemon juice
  • ½ cup sweetened shredded coconut (unsweetened coconut works fine too!)
Instructions
  1. Mix together everything aside from the shredded coconut in a large bowl.
  2. Roll into 20 balls.
  3. Place coconut on a shallow plate and roll each ball in coconut. I found it easiest to press in the coconut to each ball.
  4. Store in a sealed container in the fridge or freezer. I put mine in the freezer as they can be eaten straight out of the freezer.
Notes
* You can also make your own coconut butter by grinding unsweetened coconut shreds in a high power blender or food processor.
