Spinach Chimichurri

Ingredients
  • 1½ cups fresh spinach, packed
  • 1 Tbsp red wine vinegar
  • 2 Tbsp olive oil
  • 2 cloves garlic
  • ¼ tsp salt
Instructions
  1. Place all ingredients in a blender or food processor. Pulse until it turns into a somewhat chunky sauce. You'll want it to be a similar consistency to pesto.
