No-Bake Eggnog Protein Balls

Easy and festive eggnog protein bites. Great to keep stashed in your freezer whenever you want a healthier snack.

  1. In a large bowl, mix together the coconut butter, whey protein, rum extract, nutmeg & honey. Mix until smooth.
  2. Add in the puffed rice and work it into the dough with your hands.
  3. Mixture will appear dry so at this point, add in the eggnog. Start with 3 Tbsp and use an extra 1 Tbsp if needed.
  4. Roll into balls. Place on a cookie sheet lined with parchment paper or foil.
  5. Mixture might be a bit sticky when rolling it, but they will firm up once chilled.
  6. Place in the freezer on the cookie sheet to firm up. After a few hours I usually remove them from the cookie sheet and place them in a container and place back in the freezer. They can also be stored in the fridge for about a week or more.
Notes
* coconut butter can be found at health food stores, or you can make your own by grinding unsweetened coconut in a good blender or food processor.
