A slightly healthier take on a traditional chocolate chip cookie. Less sugar and the addition of whole grain flour.
Ingredients
1 cup butter, softened
¾ cup brown sugar, packed
⅓ cup granulated sugar
2 eggs
2 tsp vanilla
1 cup all-purpose flour
1 cup spelt flour
1 tsp baking soda
½ tsp salt
1 cup semi-sweet chocolate chips
Instructions
Preheat oven to 375 degrees F
Beat together the softened butter, and both sugars until fluffy.
Add in the eggs one at a time, and the vanilla. Mix until combined.
In a seperate bowl, mix together all the dry ingredients (flours, baking soda and salt).
Mix the flour gradually into the butter mixture.
Lastly, stir in the chocolate chips.
Drop by a teaspoon on your cookie sheet.
Bake for about 9-10 minutes until just golden around the edges.
