Detox Soup

Easy detox soup. Great jump start to healthier eating and helps to alleviate bloating.
Ingredients
  • ½ head green cabbage, thinly sliced (4 cups sliced)
  • 1½ cups celery, chopped
  • 1½ cups carrots, chopped
  • 1½ cups onion, finely chopped
  • 4 cloves garlic, minced
  • 1 - 28 oz can no-salt added diced tomatoes
  • 1 carton (4 cups) less sodium vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp pepper
  • 1 T oil
  • Salt (to-taste-optional)
Instructions
  1. Add 1 Tbsp oil to large soup pot.
  2. Add in carrots, onion, celery and cook until vegetables start to become tender.
  3. Mix in minced garlic and cook a couple minutes more.
  4. Add in the cabbage, can of diced tomatoes, vegetable broth, oregano, basil, pepper. Add salt if needed, to taste.
  5. Simmer together for 20-30 min or until all the veggies are soft.
Notes
If you want your soup to have more broth, add extra vegetable stock, or water. Enough to your liking.
