Spicy Turkey Sausage, Chard and Potato Soup

Warming and comforting soup with a bit of spice. Hearty and delicious.
Ingredients
  • 450 grams spicy turkey italian sausage (raw, uncooked)
  • 2 cups onion, chopped
  • 3 cloves garlic, minced
  • 2 cups lower sodium chicken broth
  • 3 cups water
  • 1 bunch swiss chard, chopped
  • 3 cups diced potato (yellow or red potatoes)
  • Pepper if needed (to taste)
Instructions
  1. In a large pot, saute the turkey sausage, when almost cooked through, add the onion and garlic and saute together until the onions are translucent.
  2. Add in the chicken broth, water and diced potatoes. Put the lid on and simmer on low together until the potatoes are cooked (about 20 minutes).
  3. When almost done, add in the chopped chard and wilt it into the soup.
  4. Serve with a sprinkle of fresh Parmesan cheese (optional)
