Spicy Turkey Sausage, Chard and Potato Soup

- 450 grams spicy turkey italian sausage (raw, uncooked)
- 2 cups onion, chopped
- 3 cloves garlic, minced
- 2 cups lower sodium chicken broth
- 3 cups water
- 1 bunch swiss chard, chopped
- 3 cups diced potato (yellow or red potatoes)
- Pepper if needed (to taste)
- In a large pot, saute the turkey sausage, when almost cooked through, add the onion and garlic and saute together until the onions are translucent.
- Add in the chicken broth, water and diced potatoes. Put the lid on and simmer on low together until the potatoes are cooked (about 20 minutes).
- When almost done, add in the chopped chard and wilt it into the soup.
- Serve with a sprinkle of fresh Parmesan cheese (optional)
