Curry Chicken Salad Sandwich

Quick and easy lunch idea, especially if you have leftover chicken or turkey on hand.
Ingredients
  • 3 oz cooked shredded white meat chicken or turkey
  • 1 Tbsp low fat mayo
  • 1 Tbsp non-fat greek yogurt
  • 2 Tbsp grated carrot
  • ¼ tsp curry powder
  • 1 tsp cilantro, chopped
For Serving (not included in nutrition)
  • Lettuce
  • Sliced whole wheat or gluten free bread
Instructions
  1. In a small bowl, mix together the chicken, mayo, yogurt, carrot and curry powder.
  2. Once mixed, place on your bread or toast with lettuce underneath.
  3. Place chopped cilantro on top.
