The baking formula has more calories than just stevia drops for example because it has fiber (carbohydrate) added, to make it bigger volume so it measures more cup for cup to sugar. Hence the extra calories.  You can use something more concentrated like drops if you like, but I find for baked goods like muffins and cakes, the baking formula yields a better result.
