Bacon & Cheddar Protein Muffins

I’m so excited to be sharing this recipe with you!  It is my first ‘savory’ protein muffin recipe!  To hubby and I, they remind us of an Egg McMuffin!  Same sort of taste, but obviously WAY healthier.  These are best enjoyed warm (or re-heated).

Bacon & Cheddar Protein Muffins

Makes 12 muffins

1 1/2 cups oat flour (just grind oats in your blender to make flour)
3 x 30 gram scoops unflavored whey protein powder
1/2 cup corn meal
2 tsp baking powder
1 tsp baking soda
Pepper (to taste)
2 slices (81 grams) of cooked bacon, chopped
1/2 cup light old cheddar cheese, grated + 2 Tbsp for topping
1/2 cup egg whites (I use carton kind)
1/3 cup unsweetened applesauce
1 cup low fat milk (I used unsweetened almond breeze)

Preheat oven to 350 degrees F.  In a large bowl, mix together all dry ingredients, plus grated cheese (except for the 2 Tbsp for topping), and cooked bacon.  Add in wet ingredients (egg whites, milk, applesauce). Mix until blended.  Pour into a prepared muffin tin sprayed with cooking spray or lined with paper liners.  Sprinkle remaining cheddar cheese on top of each muffin.

Bake at 350 degrees for approx. 14 minutes, or until just golden brown around the edges.
