A perfect summertime salad! Refreshing watermelon paired with basil and feta. The perfect salty and sweet combo in a salad. It will be a hit at your next BBQ or potluck!

Watermelon & Feta Salad
Makes 6 servings
223 grams light feta cheese (I used Apetina Light)
1/2 large seedless watermelon, cut into bite size pieces (6 cups)
1 Tbsp olive oil
1/4 cup balsamic vinegar (fig, raspberry or regular balsamic, whatever you have)
Bunch of fresh basil, chopped (could also use fresh cilantro or fresh mint)
1/2 small red onion, sliced thinly (approx. 1/3 cup)
3 cups arugula (or baby spinach could work too)
Cube watermelon into bite sized pieces, either small squares, or you could also use a melon baller. Cut feta cheese into bite size pieces. Place in large bowl. Add in olive oil, balsamic vinegar, basil, red onion & arugula. Toss until combined. Serve immediately.
