Pecan Pie Oatmeal

All this talk about Pecan Pie and the holidays got me wanting some! But of course, the real thing has a CRAZY amount of calories/fat/sugar.  Here is my healthified oatmeal version that you can have daily!  I had mine along side a 6 egg white omelet.

Pecan Pie Oatmeal

Makes 1 serving

1/3 cup quick oats
2 Tbsp pecans, finely chopped
1 tsp raw brown sugar (like sucanat or coconut palm sugar)
1/2 tsp butter (or I used Earth Balance)

In a small microwave bowl, place chopped pecans, raw brown sugar and butter.  Microwave for 20 seconds or until butter and sugars are melted. Set aside.  In another bowl, place oats, and use enough water to cover the oats (approx 2/3 cup).  Microwave for 3-3 1/2 minutes on high.  Remove, then place pecan topping on oatmeal and dig in!  You could also top with milk if desired (I didn’t).
