Balsamic Chicken with Pears

This was a really simple recipe.  It was done in a skillet in less than 30 minutes.  The balsamic and pear is a great combination.  I served it up with some steamed green beans.

Balsamic Chicken with Pears

Makes 4 servings

4 x 3 oz chicken breasts, raw
Pepper
3 cloves garlic, minced (could also use bottled garlic, 1 Tbsp)
1 cup no-salt added chicken broth
1/4 cup balsamic vinegar
2-3 packets of stevia (depending on how sweet you like it)
1 medium pear, peeled, cored & sliced
2 tsp cornstarch, dissolved in 1/4 cup warm water

Heat up your skillet on the stove.  Mist pan with oil or cooking spray.  Cook raw chicken sprinkled with pepper until browned on both sides.

To the pan, add in chicken broth, balsamic, garlic, stevia and simmer. Add in pear and simmer for another 5-6 minutes until the pear is soft and chicken is cooked through.

Remove chicken, and add in cornstarch/water mixture at low to medium heat until the sauce thickens.

Serve the chicken with the pear/balsamic sauce on top.
