My different take on meatloaf. Really yummy and a great weeknight dinner!
Makes 4 servings
Ingredients
1/2 a package of plain rice crackers (you could also sub with 1/2 c ground oats)
1lb (454g) package lean ground turkey
1/2 cup chopped green onions
1/4 cup hoisin sauce (check for gluten-free)
1/2 cup chopped red bell pepper
1/2 cup drained chopped canned water chestnuts
1 tablespoon low-sodium soy sauce (use tamari for gluten-free)
1 tsp grated fresh ginger (or use jarred)
3 garlic cloves, minced (or 1 Tbsp jarred)
2 tsp Chinese 5 Spice
2 egg whites
1 Tbsp sesame seeds
Directions
Preheat oven to 375°. Place crackers in a food processor or magic bullet etc and process until finely chopped. Combine all ingredients except hoisin sauce in a large bowl. Spray a loaf pan (or muffin tin) with cooking spray and place mixture in pan and smooth out. Or, shape into 4 large burgers and place on broiler rack. Spread hoisin over top of loaf or burgers and sprinkle with sesame seeds. Bake at 375° for 40-45 minutes or until no longer pink.
Note: It will take less time if cooking in muffin tins or burgers (20-25 min)
