This is a great lunch idea as its only a few ingredients, and simple to put together. Its a low carb way to make egg salad, and its really delicious!
Low Carb Egg Salad Wrap
Serves 1
2 hard boiled eggs, mashed (for lower fat use 1 egg & 1 egg white…saves 5 g of fat)
1 Tbsp low fat mayo (I use Hellmans, could also use 0% greek yogurt to save 5 g of fat)
1-2 tsp yellow mustard
1 small dill pickle spear, chopped
1 tsp pickle juice
Pepper (to taste)
1/4 tsp dill (dried) – optional
2-3 romaine lettuce leaves, washed & patted dry
In a small bowl, mash egg, add in all other ingredients except lettuce. Spread egg mixture on lettuce leaves, wrap up and eat.
