Don’t you just love the name? I was sold! I came across this recipe on Pinterest, and thought it looked great. Only I wanted to use chicken breasts versus thighs and also wanted to add a bit more kick to the sauce. So here’s my adapted version. My hubby agreed with the name, he was a pleased man!

Man Pleasing Chicken
Makes 4 servings
4 x 4 oz chicken breasts, raw
1/2 cup dijon mustard
1/4 cup maple syrup
1/2 tsp garlic powder
1/4 tsp ground sage (could omit if you don’t have)
1 Tbsp rice wine vinegar
Preheat your oven to 450 degrees F (yes, 450!). In a small bowl, mix together all the ingredients aside from the chicken with a fork until smooth. In an oven proof dish, pour enough sauce to just cover the bottom. Add in the raw chicken, then pour the rest of the sauce over-top. Bake in the oven for 25-30 minutes until the chicken is no longer pink or a meat thermometer reads 165 degrees F.
Note: In the original recipe, the blogger suggested topping with fresh rosemary, but I didn’t have any on hand. If you do, it may be a good addition.
