Blondies. Can you really go wrong? After the success I had with my Peanut Butter Cup Blondies, I knew I’d need another variation. I was inspired by this recipe, that I adapted to make it healthy and packed with protein!
Peanut Butter & Jelly Swirl Blondies
Makes 16 blondies
1 cup oat flour
3 x 30 gram scoops Whey Gourmet vanilla whey protein
1/2 tsp baking powder
1/8 tsp sea salt
1/2 cup Krisda stevia baking formula (if you use packets, then 12 packets)
1/4 cup natural peanut butter (smooth)
1/3 cup unsweetened applesauce (1 snack pack) *I increased this slightly from the video.
1 tsp vanilla extract
1/4 cup unsweetened almond milk (or milk of choice)
2 egg whites (I used 1/4 cup carton egg whites)
Topping:
2 Tbsp natural peanut butter (smooth)
2 Tbsp lower sugar jam (I used strawberry)
Preheat your oven to 350 degrees F. In a large bowl, mix together all the dry ingredients. In a smaller bowl, mix together all the wet ingredients. Add the wet ingredients to the dry and mix well. Pour into a greased or sprayed 9×9 square pan. Dab peanut butter in various places on top of the batter. Do the same with the jam. Using a knife, cut into the batter and do a swirling pattern to distribute the peanut butter and jam into the batter.
Put in oven and bake for 20-22 minutes until firm on top. Cool and cut into 16 blondies.
