Healthy Cocoa Puffs

I was never lucky enough as a kid to be allowed cocoa puffs cereal.  The highest sugar cereal that was allowed in my house was honey nut cheerios! But this recipe will make you think you’re having cocoa puffs and sneak in a bit of protein too!

Is also a GREAT topper for greek yogurt and frozen yogurt!

Healthy Cocoa Puffs – Makes 10 servings

2 cups plain puffed rice (for gluten free) or you could also use puffed wheat
2 Tbsp butter (or margarine like Earth Balance for dairy free)
2 Tbsp honey (I used raw honey)
2 Tbsp unsweetened cocoa powder
1 scoop chocolate whey protein powder (I used one sweetened with stevia.  Personally I choose not to give my child protein sweetened with artificial sweeteners) *could omit this

In a larger bowl mix together puffed rice and protein powder.  Meanwhile, in a saucepan over low/medium heat, melt together margarine/butter, honey and cocoa powder until it melts together and starts to bubble.  Be careful not to burn it.  Once the syrup is ready, pour over the puffed rice & protein and mix well.  Let cool.  Store in airtight container.

NOTE: If you omit the protein powder, you can make cocoa clusters as it will stick together.  You could press into a pan and refridgerate and cut into squares.
