This is a different variation of typical coleslaw, which is usually just boring mayo and cabbage. You’ll love this fresh tasting and different version that contains pear, cranberries & walnuts!

Healthy Coleslaw
Makes 5 servings
1 bag cabbage mix (397 grams)
1 pear, chopped
1 x 100 calorie pack (approx 3 Tbsp) Dried cranberries (Craisins)
1/4 cup walnuts, chopped
1/4 cup fat free yogurt (regular or greek yogurt)
1/4 cup low fat mayonnaise
1/4 cup apple cider vinegar (red wine vinegar would work too)
1 Tbsp honey
In a large bowl, mix together cabbage mix, chopped pear, walnuts & cranberries. In a separate small bowl, mix together the dressing ingredients (yogurt, mayo, vinegar & honey) and whisk until blended. Pour dressing over coleslaw and mix well. Serve immediately.
If you are serving later, add the chopped walnuts at the last minute so they don’t get soggy.
