Post-Vacation Week in Review

Greetings all!  Getting this post out a day late.  Yesterday was a busy day (as was the rest of the week).  Isn’t it fun coming back from a week of vacation to all the emails, follow up, client visits etc!

to do list.jpgFor those of you that don’t know what I do, I’m an Account Manager for a vitamin company. I’ve been doing that for the past 6 years.  Let me tell you, keeping up a website (I’m a 1 gal show!) and a career with a husband and toddler is NOT easy.  I sure discover how busy I really am when I go away on vacation, them come back to everything again.  But somehow I get it all done, and fit in my workouts and healthy eating, so truly, if I can do it, ANYONE can!
So when we got home, I was ready to get back to my regular eating and exercise.  The thought of one more buffet had my stomach turn.  The food at the resort was good, but you really do get tired of it after a week.
Food this Week:

I was really craving BBQ fare.  The weather in Vancouver finally improved this week!  The sun came out if you can believe it!  We still have plenty of moose meat in our freezer from Brent’s hunting trip, which I had totally forgot about.  I find that when its in things, you can’t even tell its a wild meat.  Plus, you can’t get any more organic than that!  Its also leaner than any ground meat you’ll get at the grocery store.  So alas, I did up some simple Moose Burgers….

What’s in them?  1 lb ground moose, onion, garlic powder, montreal steak seasoning, mustard, 1 egg, 1/4 c oat flour, Worcestershire sauce. Typical burger seasoning in my book.  Came out SUPER good!

I posted these on the RECIPE page this week.  So so good.  Even better with the tzatziki sauce!

I also did some cereal coated chicken strips.  I use Nature’s Path (gluten free) Mesa Corn Cereal.  So delish on chicken strips!!! Get the recipe HERE.
Chili Lime Dip

I also did a low fat, gluten free, super simple, chili lime yogurt dip to go with the chicken strips.  It came out SO GOOD!  It would also be delicious with quesadilla’s, taco’s, chicken or beef skewers.  The will be the EXCLUSIVE recipe for the May E-Newsletter.  I’m working on it this weekend.  SIGN UP HERE to get on the list!


Higher Protein Popcorn

As a snack one evening, I turned my popcorn into a higher protein popcorn!  It was delicious!  I didn’t do the measurements, so I’ll be making it again and posting the recipe soon!

Sometimes getting back from vacation, it can be tough to get back into the routine.  Here’s how my week or workouts looked.

Plans this Long-Weekend
Its a long weekend in Canada this weekend!  Woohoo!  Its nice coming back to a short week the following week!  We’re doing a bunch of projects around the house this weekend.  Brent got some hanging baskets for our porch and backyard yesterday.  Also will have a little garden in some pots!  Tomatoes, strawberries and jalapeño peppers.  I’m also going to get a bunch of herbs to put into pots….mint, cilantro, chives, basil, rosemary.  I must admit though, I don’t have much of a green thumb, I tend to kill house plants!!!!
I’m also in the market for a new laptop.  The one I have now is constantly crashing.  Not good at all!  I’ve had nothing but problems with this HP.
