I love mojitos!  So refreshing on a hot summer day!  Try this version to save all the calories!!!  You will notice its a mock-tail (no booze).  You could add 1 oz of white rum, but it will make it a calorie-cocktail.

Healthy Mojitos

Serves 1

Juice of 1 lime
2 packets stevia
6 ice cubes
1/2 tsp rum extract
1/2 can plain club soda
10+ leaves of fresh mint

Place lime juice, stevia, rum extract and fresh mint in a tall glass and muddle together with a spoon (end of a wooden spoon works great too).  Add ice cubes, soda, additional fresh mint and stir.  Add more lime juice and/or stevia to taste.

Calories: Negligible.
