Yummy Turkey Meatloaf

I’ve played around with many turkey meatloaf recipes, but this one seems to taste the best to me.  I love how its all done in 1 bowl, then straight to the oven, no fuss!

Makes 4 servings

470g (1 package) lean ground turkey breast (or ground chicken breast)
1/2 cup quick oats
3 egg whites (I used 1/4 cup + 2 Tbsp of the liquid carton kind)
1 tsp dried thyme
1/2 to 1 tsp dried oregano (dried marjoram is ok too)
1 tsp garlic powder
Pinch sea salt
1 tsp pepper
1-2 tsp Worcestershire sauce
1 carrot, grated
1 celery stalk, diced
1 medium onion – half of it grated, other half sliced thinly
3 Tbsp low carb ketchup
Preheat oven to 375 degrees.  Mix all the ingredients except the ketchup and sliced onion together (clean hands work best!).  Lightly press into a loaf pan sprayed with cooking spray.

*NOTE: For faster cooking time (will be about 20 minutes), instead of a loaf pan, you could use a 12 servings muffin tin or 8 servings in a mini loaf pan.

Spread ketchup on top in a thin layer and spread thinly sliced onion on top and bake at 375 degrees for about 35-45 minutes or until the sides of the loaf are browned.

Cut into 4 large slices
