No-Bake Peanut Butter & Butterscotch Cookies

Its hard to think about turning on the oven in summer to make cookies, so these no-bake cookies are a great treat!  You can just pop them in your mouth or another fabulous idea would be crumbling them in your favorite plain yogurt or frozen yogurt 😉  You catch my drift?  Butterscotch chips aren’t exactly the healthiest, but you’re only using a couple tablespoons, and really, there is no alternative.  The peanut butter/butterscotch combo is crazy delicious.

No-Bake Peanut Butter & Butterscotch Cookies

Makes 12 cookies

Ingredients

1/3 cup raw almonds
2 Tbsp oats (quick oats or old fashioned)
2 Tbsp natural peanut butter
1/2 tsp vanilla extract
1 Tbsp honey (or agave)
2 Tbsp butterscotch chips

Directions

In a blender, food processor or Magic Bullet, blend together the almonds & oats.  Once blended to a flour type consistency, place in a bowl.  With a spoon, mix in peanut butter (melt a bit if its super hard), vanilla & honey.  Once smooth, stir in butterscotch chips.

Roll into small balls, and place in freezer or fridge.  I placed mine on parchment on a plate or you could also put them in a plastic container, layered with wax paper or parchment.
