Ugly (but tasty) Apple Sage Turkey Meatloaf

So I wasn’t lying when I said these were ugly! I’d be lying if I said I’ve seen a beautiful meatloaf….because I haven’t. Its one of those dishes that taste better than they look.  I promise you, if you try these, you might just have them as a regular go-to dinner during the week because they are so quick and easy and taste good!  Mild, but with a great flavor, so I wouldn’t be surprised if your kids go for these too!

Ugly Apple & Sage Turkey Meatloaf (gluten free)

Makes 4 servings (12 meatloaf muffins or 1 loaf)

Ingredients

1 pound (454 grams) lean ground turkey
1/2 medium onion, grated
1 medium apple, cored and chopped fairly small
1 tsp ground sage
1 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
3 egg whites (or 1/4 cup plus 2 Tbsp carton egg whites)
1/2 cup quick oats
Topping (optional) honey mustard. Store bought, or honey mixed with yellow mustard (half and half)

Directions

Preheat your oven to 375 degrees F. In a large bowl, mix together all ingredients except the topping. Spray a muffin tin or loaf pan with cooking spray. Top each mini-meatloaf with honey mustard if desired. Bake muffins for around 15-20 minutes until no longer pink. 1 loaf will take about 40-50 minutes.
