Cherries and chocolate are a great combination, so I decided to put them in muffin. If you’re feeling adventurous, you could even add in some dried cherries for extra cherry flavor. When baked, they resemble a blueberry muffin, as they’re a similar color.
Cherry Chocolate Chip Protein Muffins
Makes 14 muffins
Ingredients
1 1/2 cups oat flour (or flour of choice)
2 x 30 gram scoops (1/2 cup) whey protein, vanilla (I used Whey Gourmet Naturelle Vanilla) *could also sub for extra flour
1 tsp baking soda
1/2 tsp baking powder
8 packets stevia (or sweetener of choice, use to taste)
3 egg whites (1/4 cup plus 2 Tbsp carton kind)
2 snack packs (2/3 cup) unsweetened applesauce
1 1/2 cups frozen pitted cherries, chopped
1/4 cup semi-sweet chocolate chips
Directions
Preheat your oven to 350 degrees. In a large bowl, mix together everything from oat flour to stevia. Mix together until combined. Add in egg whites, applesauce and stir. Lastly, add in cherries and chocolate chips and gently fold in. The batter may change color a bit from the cherries.
Spoon into a muffin tin. Bake for 12-14 minutes until just done. Don’t over-bake or they will get dry.
Store in a sealed container in the fridge.
