Today went by so fast.  It was one of those days where as soon as I ate my last meal, it was almost time for the next one!  I feel I didn’t eat as much as I usually do, so there will definitely be a before bed snack tonight.

Breakfast

Lets be real….before food…there is always coffee. First thing. Got a new shipment from Keurig, and of course HAD to get the Pumpkin Spice Coffee, since its a seasonal thing.

I like to always have eggs in the morning. I wasn’t feeling toast today, so instead I had some apple slices, which were leftover from making my daughters school lunch. I was also a little carbed out from an extra sampling of Pumpkin Scones yesterday 😉

I was off to the gym again after school drop-off. Today I remembered to take my pre-workout (Vega Energizer) which is a good thing, cause I could have used the extra energy today.

After the gym, the little one and I came home and had lunch. I had some leftovers from the other night, Orange Maple Baked Chicken with Onions & sauteed green beans. The chicken was delicious (recipe will be coming here soon).

Since I didn’t have a carb with lunch, about an hour later, I was hungry, so I had a no-bake protein bar. These were some No-Bake Pumpkin Pie Protein Bars (new recipe I tested). They are so so good, so it was a bit tough to just have one!

After school, we had a playdate. I nibbled on a couple pieces of fruit, but hardly anything, so I was hungry for dinner when I got home.

Dinner

I wanted to test out a new Crockpot I got on sale…to replace my old one, as I think something might be wrong with it as its cooking everything really fast, even on low.

I did a beef roast with some potatoes, carrots, celery and onion. It was about a 3 lb roast, and I cooked it for 5 1/2 hours on high in about 2 cups of beef broth.  I did as suggested by one of my readers, and put all the veggies on the bottom and the roast on top.  It came out a little more done than I like it, so next time I’ll do less hours, or put it in sooner and have it on low. It was still tasty nevertheless.

I know right? Ketchup on the side…gross?  Can’t help it, I like ketchup with my beef!

Once again, since I’m posting right after dinner…I’ll be having a snack later on. Probably some non-fat greek yogurt, with stevia, with some granola on top. 🙂

Can’t wait to sit on the couch, light up my pumpkin candle and relax!
