Lemon anything and there’s a pretty good chance I’ll love it. Lemon and coconut? Not sure if it can get much better in my book! I’m wanting spring to get here asap, so that was my inspiration behind these lemon bliss balls.
But its no secret that I’m a coconut fan. I have a recipe for coconut bliss balls that were the base recipe for these. I added a lot of lemon flavor to kick these up to a whole new level.
For a big punch of lemon flavor in these, I used a combination of lemon extract (found in the baking aisle), fresh lemon juice and lemon zest. If you can’t find lemon extract or don’t have it on hand, you can totally bump up the lemon zest to 2 tsp and it would add that extra zing! I personally liked the combo of all three so I’d stick to that next time around.
I also love that these are so yummy straight out of the freezer. The coconut butter prevents them from freezing rock solid. You can bite into them even when they’re frozen. Next time you need a lemon fix, I hope you give these a try!
- ½ cup coconut butter
- ¾ cup puffed rice
- ¾ cup whey protein, vanilla (I used Whey Gourmet)
- 2 tsp lemon extract
- ¼ cup honey (I used Nature's Hollow sugar free honey)
- 1 tsp lemon zest
- 2 Tbsp lemon juice
- ½ cup sweetened shredded coconut (unsweetened coconut works fine too!)
- Mix together everything aside from the shredded coconut in a large bowl.
- Roll into 20 balls.
- Place coconut on a shallow plate and roll each ball in coconut. I found it easiest to press in the coconut to each ball.
- Store in a sealed container in the fridge or freezer. I put mine in the freezer as they can be eaten straight out of the freezer.
