You will LOVE this dish. Great & quick for a BBQ side dish. Who doesn’t love bacon?! Makes 5+ cups! Done in 15 min.
Ingredients
20 spears asparagus, blanched, cut into pieces
3 slices Reduced Sodium Bacon
3 plum tomatoes, seeded & chopped
1 cup chopped celery
1/4 c light feta cheese, crumbled
Dressing:
Juice of 1/2 lemon
1 Tbsp Olive Oil
2 Tbsp chopped chives or green onion
2 Tbsp chopped parsley
1 Tbsp Balsamic Vinegar
1 tsp Honey
Pepper to taste
Directions
Cut asparagus into pieces, blanch in boiling water for 4-5 min. Should be bright green…immediately put in cold/ice water. Meanwhile cook bacon on stove or in microwave till crispy. Remove excess fat and pat with paper towel. Cut into pieces. Add ingredients together in big bowl. Mix all the dressing ingredients in small bowl and add to the large bowl with all the ingredient. Toss. Can be made ahead as well!!
Also great for lunch with some cold chicken on top!!
