So as I mentioned in yesterdays post, I am fighting a cold. I whipped up a batch of this soup and it was delicious and helped me feel better. The measurements aren’t exact, cause really, who measures everything in soup…you just kind of throw stuff in!
Beat A Cold Chicken Soup
1 rotisserie chicken
6-8 cups water
2 packets low sodium chicken bouillon
3-4 carrots, chopped
1 onion, chopped
4-5 stalks celery, chopped
2 bay leaves
1 Tbsp dried thyme
sea salt and pepper to taste

Bring a large pot of water to boil. I filled half a large soup pot with water. Tear the skin off a rotisserie chicken & discard. Set aside the white breast meat (this recipe I used the dark meat). Boil the chicken and bones for 15-20 minutes (if you have longer, even better). Fish out the bones.
In a seperate pan, saute the carrots, celery, onion in a tsp of olive oil. Add it to the soup. Add in the packets of chicken bouillon, bay leaves, thyme, pepper (and salt if needed). Simmer for 15-20 min. (or longer).
When soup is ready, add in half a bag of fresh spinach and stir until wilted in.
