Breakfast can be the hardest meal of the day, especially when you’re rushing out the door in the morning. These chocolate chip whey protein waffles are a wonderful make-ahead option. Store them in the freezer and pop in the toaster to re-heat. Then you have a pretty complete breakfast in only 2 minutes!
These waffles are filled with lots of good-for-you breakfast foods. Oats, non-fat greek yogurt, chia seeds, whey protein and eggs. The addition of the chocolate chips makes it a hit with the whole family. While smoothies are a great and quick option too, when the weather is cool and rainy, I prefer something warm.
I used regular semi-sweet chocolate chips in these, but if stevia chocolate chips (I like Krisda and Lily’s) are available to you, feel free to use those, and it will lower the overall sugar in the recipe.
The toppings on these are endless. add peanut butter, fresh fruit, almond pieces or make it more dessert like this with coconut whipped cream and a few chocolate shavings. Most of the time I actually just eat them plain, as most of the time I’m eating them in the car, wrapped in a paper towel on my way to school drop off!
