Easy Homemade Applesauce & Upcoming Contest!

Happy Friday!  Oh what a happy day it is.  My hubby is coming home tonight from his over 1-week hunting trip.  They ended up getting 2 moose, so we’ll be able to replenish our wild meat supply.

We took a trip to the Apple Festival last weekend, and stocked up on some Jonagold apples.  I asked the expert what the best kind is for making applesauce, and that’s what he recommended.

For my Easy Homemade Applesauce, here’s what I did:

Threw them in a big pot with just a little bit of water…covered them, and let them simmer until they were soft (about 15 minutes)

From there, I mashed the cooked apples through a not-so-fine strainer, added some stevia to sweeten it up a bit.  When making applesauce and jam, I like to use the NuNaturals White Stevia Extract Powder.  Its so concentrated, I’m not kidding, you only need like 1/16 to 1/8 of a teaspoon to sweeten an entire batch!  The end result – Applesauce!!  I loved the pink hue it became from cooking it with the skin!  Adds more nutrients too!

This week has been pretty low-key on the food front.  Since I was just cooking for myself, I did quite a few salads for dinner. The one I posted earlier this week, the Asian Chicken Salad, is definitely a dinner-worthy salad!

Other than that, its been a pretty un-eventful week.  Well aside from the fact that a fake palm tree we have fell on Sienna. She made out ok though, no stitches (thank goodness). A band-aid was all, and she was good to go. But I saved my nerves and decided to pack up the palm tree and store in the garage until no more hyper young children are at risk anymore.

All is happy in the world again

Don’t you notice when you have kids, that slowly, your house begins to have no style?  It becomes all about safety and not having breakable things around. Not that I had anything super fabulous, but if I did, I would have been sad to put it away.

My workouts have been pretty good.  Considering my routine got thrown for a loop this week, as I usually go very early in the morning.  So instead I was fitting in workouts when munchkin was at preschool. Managed to get in all that I wanted though.  1 day of cardio, 1 day of back/biceps & cardio, 1 day of shoulders/cardio.  I’d also like to fit in a leg day this weekend.
