Easy Microwave Pumpkin Cookies

Actually I like to call this a Mookie.

Mookie you ask?  That means not quite a cookie, and not quite a muffin.  That would be the best thing to describe this creation!  Whatever you want to call it, its a great & quick snack that pairs perfectly well with a protein shake!

Easy Microwave Pumpkin Cookies (aka Mookie)

Makes 8 cookies

3/4 cup Bob’s Red Mill Gluten Free Pancake Mix (if your not gluten free, you could use whatever whole grain pancake mix you’ve got)
2 Tbsp liquid egg whites (or 1 large egg white)
1/4 cup canned pumpkin
1/2 tsp cinnamon
Pinch ground ginger
Pinch nutmeg
1/2 tsp vanilla extract
2-3 packets stevia
2 Tbsp coconut palm sugar (or sucanat, or dark brown sugar)

Mix all ingredients together into a dough.  Line a microwave safe plate with parchment paper.  Drop cookies by tablespoon onto plate (4 at a time, so you’ll do 2 batches).  Microwave for 90 seconds until they are puffed and dry.  They will be slightly chewy, moist, with a muffin type texture.
