Happy Friday! What a week! For Flashback Friday, I’ve got a super cute picture! Roxie, our puggle turned 4 this week! Here she is at a mere 8 weeks old. Awwwww. Don’t you want to just smoosh that little face?
I also managed to get a great picture of MacGregor this week. I caught him in his weird sleeping pose. It looks strange when a dog his size sleeps in a position like this!
He opened his eyes when the flash went off, hence the ‘stunned’ look!
In other news, tried out some great new eats this week!!!!
This idea was from my sister-in-law and fitness competitor. Pesto & Feta Stuffed Chicken Breasts! Its a great way to dress up plain chicken.
All you do is just pound out chicken breasts between plastic wrap. In the middle, place 1 Tbsp store bought pesto and 1-2 Tbsp feta (I used goats feta). Fold together the chicken and place in a casserole dish fold side down. I also sprinked on a herb seasoning. Bake uncovered at 350 degrees for about 35-40 minutes uncovered. Done and YUM!!!! I served with roasted califlower and broccoli.
I also am a BIG fan of Faux Fried Chicken. I did a batch with a corn cereal coating. (Nature’s Path Mesa Corn Cereal).
I just dip the chicken pieces in cornstarch, then egg white, then the cereal (which I pulverised in the Magic Bullet). Bake in an oven proof dish at 350-375 degrees for about 30 minutes. VOILA!
Next up was a pasta dish I’ve been wanting to try for a while. Spinach & Artichoke Pasta. OH YES! You know that fattening and delicicous spinach and artichoke dip, but in a pasta form.
Since I’m not so great with dairy to this degree, I subbed for Toffuti (dairy free cream cheese), almond breeze and a bit of regular parmesan. Funny thing is, hubby could NOT tell at all I was using the fake stuff. He just though I would be having serious stomach issues later! He also didn’t realize I used brown rice pasta! HEH! I actually did a horrible job of measuring in this recipe, I literally just tossed everything in. Once I have a concrete recipe for it, I will post it.
I also did another round of Buffalo Chicken Salad
If you didn’t see that I posted the Lemon Poppy Seed High Protein Muffins…..you NEED to make them ASAP!!!! Sooooo good. I’m making another batch this weekend.
Had some GREAT workouts this week.
Monday – leg workout. It was seriously good. I threw in a bunch more hamstring exercises and deadlifts. Its Friday and my hams are still sore! Wednesday – bootcamp. Lots of skipping, good combo of upper body & lower. Friday – HIIT (interval bootcamp workout). Didn’t have much time, so squeezed in 30 minutes. My back is still not 100%, so my chiropractor recommended no more than 3-4 workouts per week until its better. So alas, I wait.
