Seriously, its Wednesday already? I’m not adjusting well having a few days off. I’m not quite ready to get back into my routine! Doing nothing is pretty darn fun!
I’ve been a bit stuck on today’s Favorite Find lately. Perhaps since we have our house for sale, so I’m trying not to dirty the kitchen as much. Maybe because we got our air conditioning working again, so I don’t mind having soup in the middle of summer. Or perhaps maybe because its DELICIOUS!
I think all of the above 😉
Most of you have probably seen THAI Kitchen products in your grocery store….no?
They have a broad line of products….everything from sauces, to curry pastes, rice, noodles, coconut milk, etc etc. Check out their website to see the full array of stuff. What many people don’t know, is most of their products are gluten free and dairy free. Some are also vegan and organic.
I’ve bought their lite coconut milk as long as I can remember, as well as their yellow curry paste, which is amazing in my Quick & Light Coconut Shrimp Curry.
So I’ve been a fan of their products for a long time. As you know, I’m not really a fan of many ready-made things for 2 reasons. 1) sodium & 2) fat
While many of the THAI kitchen ready-made soups are too high in sodium for my liking, there are a couple that are significantly lower than some of the others, which are close to 1000mg of sodium per serving (yikes!)

Nutrition per bowl: Calories: 120 Fat: 1.5g Carbs: 23g Fiber: <1g Sodium: 560mg Sugars: 3g Protein: 2g
I also added cut up chicken breast and cut up broccoli to mine to up the protein & fiber.

Basically, its a healthier “ramen noodle” alternative…

So now you know a couple of my favorites! I don’t have them all that often, but they are nice every once in a while 🙂
