'FIRE IN THE HOLE' Yam Fries &'DA BOMB' Butternut Squash Fries

First things first….just have to wish a HAPPY 2nd Birthday to our beautiful daughter Sienna today!!!

Since we already had her birthday party, today we’ll just spend some mother/daughter time together.  Hubby is going away for the weekend for a stag.  Solo parenting weekend yet again so wish me luck 🙂

Today I wanted to share some awesome recipe ideas if your like me and LOVE fries!!!!!!!!

I bet you would like these spicy yam fries!!! Perfect side to a turkey burger or chicken breast!  Hubby absolutely loved them!  Here they are before the went into the oven!

FIRE IN THE HOLE YAM FRIES

Cut a whole big yam (leaving skin on) into fry strips.  For seasoning you’ll need:

Garlic powder
Sea salt
Pepper
Chili powder
Cayenne powder
Chipolte Chili Powder (McCormick brand)

The amount you’ll need depends on the amount of fries have.  Go heavy on the garlic, pepper, chili powder and chipoltelike 2tsp each….and easier on the salt, cayenne(1/2 to 1 tsp).  Do this is a bowl, it coats them much better.  The place on a cookie sheet sprayed with cooking spray and bake in a 400-425 degree oven for approx 25-30 min (flipping them halfway through)

Or what about these DA BOMB BUTTERNUT SQUASH FRIES!

They are da bomb because for 100grams of these babies (which is A LOT of fries) 40 calories!!!  Who doesn’t LOVE that!?!

For these you’ll need:

Garlic powder
Sea salt & pepper (I use Celtic sea salt)
Thyme
Rosemary

For these, go heavy on the garlic, thyme & rosemary, easier on the salt, pepper.  Same as above, mix in a bowl and place on cookie sheet and bake at 400-425 degrees for 25-30 min.

If need a dip, a low cal ranch would suffice, or even some low fat mayo mixed with garlic powder and herbs to make an aioli!!!!

Now go make some and ENJOY!!
