I’m a big fan of most anything banana-bread like. When you’re trying to cook healthy, banana’s can really be your best friend, as they keep breads and muffins moist and flavorful.
In this *new* recipe, it also makes your morning oatmeal taste like a slice of Banana Bread.
Banana Bread in a Mug Oatmeal
I had a sad looking brown (black) banana sitting on my counter. So I had to do something with it. I was in the mood for banana bread, but didn’t want to go to all the trouble of baking. This was a perfect compromise!
Banana Bread in a Mug Oatmeal
Makes 1 serving
1/2 banana, mashed with fork
Dash cinnamon
Dash vanilla extract
1/4 tsp baking powder
10 drops vanilla stevia (or any sweetener of choice)
1/4 cup quick oats
1/4 cup unsweetened almond milk (or milk of choice)
In a microwave proof mug or bowl, mash banana. Add in all other ingredients and mix until combined. Microwave for 3 minutes. It will be more dense than traditional oatmeal and stronger in flavor. Yummy!
