Garlic Lemon & Dill Chicken

This is a very simple and delicious way to prepare chicken. You might just be fighting over the roasted garlic!  Even though there seems to be a lot, it cooks down to a very mellow flavor.  If you’re a fan of garlic, lemon & dill, than this may become your go-to easy chicken dish! If you prefer using chicken breasts, you can do that do. When I made this, I switched it up and used chicken thighs instead.

Garlic Lemon & Dill Chicken (gluten-free, dairy-free)

Makes 4 servings

Ingredients

8 chicken thighs, skin off, bone-in (could also sub with skinless boneless (or bone-in) chicken breasts
1/4 cup dill, chopped (could also use 2 Tbsp dried dill)
1 head garlic (10 cloves) peeled
1 Tbsp olive oil
1 tsp lemon zest
Juice of 1 lemon (hand squeezed)
Pinch salt & pepper

Directions

In a large 9×11 oven safe dish, combine all the ingredients and toss together. This can be done ahead of time (up to a day ahead) and left to marinate, or done just before you are set to make it.

Set your oven to 375 degrees F. Place the chicken in the oven uncovered for 25-30 minutes until it starts to brown and the chicken is no longer pink (165 degrees F if you use a thermometer).
