After all the success of the Yummy Turkey Meatloaf, I had to come up with another delicious meatloaf recipe!
Mexican Turkey Meatloaf
Makes 4 servings
1 lb (ish) of extra lean ground raw turkey (mine weighed 478 grams)
1/4 cup salsa
1/2 cup onion, chopped
1/4 cup green pepper, chopped
3 egg whites (1/4 c + 2 Tbsp of carton kind)
1 tsp chili powder
1/2 tsp cumin
1/2 cup quick oats
Topping: 2 Tbsp of additional salsa each mini loaf, or 1 Tbsp each muffin, or another 1/2 cup on a loaf
Preheat oven to 375 degrees F. Mix all together (except topping) in a bowl. Place in a mini loaf pan – holds 8 – or a muffin pan – holds 12 – or a loaf pan. Cook for 20-25 minutes (if using muffin tins or mini loaf pan), or 45-50 minutes in a loaf pan.
