I couldn’t complete my run of pumpkin madness recipes without a protein cookie, now could I? These cookies take no time at all, and are stored in the fridge for grab-n-go. If you like cookie dough, you will love these! You could also add some other things to these if you like….chia seeds, flax seeds, additional spices or even raisins!
No Bake Pumpkin Chocolate Chip Protein Cookies
Makes 18 cookies
Ingredients
1/2 cup natural peanut butter (or almond butter or nut-free alternative like Sunbutter)
1/2 cup pumpkin puree or canned pumpkin
1/4 cup honey or agave (could also use stevia or another substitute, to taste)
1/2 tsp pumpkin pie spice
1 cup quick oats
3 scoops or 3/4 cup vanilla protein (I used Whey Gourmet)
1/4 cup semi-sweet chocolate chips
Stevia (to taste if needed)
Directions
In a large bowl, mix together peanut butter, pumpkin, honey & pumpkin pie spice. Once combined, stir in protein powder, oats and chocolate chips. Dough will be sticky. Refrigerate dough until easier to handle (about 20 minutes). Roll dough into balls then press between your hands to make a cookie shape. Keep stored in a container in the fridge.
