I had a pretty good week! Busy as usual with work. Its a busy time right now, as I work for a vitamin company (www.sisu.com) and our signature product is Ester C, so we’re busy pre-booking orders and setting up Cold & Flu promotions for the fall!
You may have seen on my Facebook page, that I mentioned getting a bunch of canning stuff for my birthday from my hubby.
He knew I had wanted it, so it was well received! This year is actually the first year I’ve gotten into canning. Before, I figured it just takes too much time. But it actually doesn’t! Once you get the assembly line going, it actually moves quite fast, and you can get a batch (12 jars) done in less than 30 minutes! My first attempt was strawberry freezer jam. Next up was one of my favorite things…..Dill Pickles! They just happen to be one of Brent’s favorite things too!
Didn’t take much time for me to get started!!!!
I was a little nervous as this was the first time I actually used the canning ‘pot’ and boiled them so they could seal and be stored at room temperature. Well, they all sealed (or so it looks) so they should be good to go! I found some local dill cukes at a market nearby, and for a great deal on a 20lb box! I used a dill pickle seasoning salt (pre-made) then added fresh garlic and dill to each jar. So they’ll be really dilly and garlicky 😉
Thursday, I was actually VERY sick. A 24 hour flu. I could barely get out of bed. Not fun at all. Couldn’t keep water or food down for most of the day. By the evening, I was finally feeling a bit better, so I was able to stomach some clear broth, and a bit of a peanut butter and banana sandwich on wheat-free bread. I don’t know why, but I always go for pb/banana when I’m not feeling well…..
The dogs smelled the peanut butter, so they wouldn’t leave me alone!
The night before I got sick, I made Thai Coconut Curry, similar to my recipe for the Quick & Light Shrimp Coconut Curry but just switched up the veggies…water chestnuts, peas, yellow pepper. It was delish!
Last but certainly not least, just a cute pic of Little Miss Diva, who’s now officially 3, sniff, sniff; in her over-sized shades (so cute huh!), showing off her sucker. She loves going out with dad to the store, as sometimes she’ll come home with a treat!
This weekend, we’re just hanging out with family, then heading to a kiddie birthday party on Sunday! Hope you all enjoy your weekend!
