Hearty stew in just 15 minutes sounds too good to be true but it isn’t! I tried this one myself, but used lean moose sausage. It came out really good! I’d definitely make it again! Recipe adapted from Real Simple
Quick Bean & Sausage Stew

Ingredients
- 1 Tbsp olive oil (can omit if using a fattier sausage)
- 1 13-ounce package turkey or chicken sausage, sliced, or removed from casing.( I also use moose sausage on occasion)
- 2 cloves garlic, thinly sliced
- 1 19-ounce can white beans, drained & rinsed
- 1 14.5-ounce can low-sodium chicken broth or 2 cups chicken stock (sub for water if you wish)
- 1 14.5-ounce can low sodium or salt free diced tomatoes, undrained
- 1 bunch kale, torn
- ¼ teaspoon black pepper
Instructions
- Heat oil in a large pot or dutch oven (if using) over medium heat.
- Add the sausage and cook until browned.
- Add the garlic, cook a couple minutes (don't want it to burn). Add beans, broth, & tomatoes. Bring to a simmer.
- Meanwhile, chop kale (be sure to remove stem) and add to the pot. Just wilt it down for 2 to 3 minutes. Remove from heat. Season with pepper if needed and serve!
