Quick Chicken & Red Pepper Cacciatore

I made this the other night with what I had on hand and it turned out great!  Super simple!  I always recommend having pre-cooked chicken breasts on hand so dinner is more assembly style.  This only took 15 minutes to put together!  I didn’t add onion as I was in a real time crunch, but if you have the time, it would be a good addition! We were in such a rush I didn’t snap a picture.  Will provide one soon when I make it again.

Chicken & Red Pepper Cacciatore

Makes 2 servings

1 x 6 oz chicken breast (or 2 x 3 oz breasts), cooked & diced
1    large can of low sodium tomato & roasted red pepper soup (or 2 small) *See Note
1/3 cup jarred roasted red peppers, chopped
1/2 green pepper, cut into thin strips
1    tsp garlic (I use jarred)

Note: Brands of Tomato/Roasted Red Pepper Soup (PC Blue Menu – I used this, Pacific Foods, Trader Joe’s)

In a skillet over medium heat, pour in soup.  Add green pepper and roasted red peppers, cook until the green pepper is almost soft.  Add in chopped cooked chicken breast and garlic.  If its too thick, add a bit of water.

Optional: serve over brown rice (I LOVE the Go-Go rice, individual organic brown sticky rice that you microwave for 90 seconds!)
