How is your week going so far? So glad its Friday and that we’re in town this weekend!! Here is Sienna and I reading stories before her bedtime last night (as per usual). Tonight she decided she wanted to wear her daddy’s hat!!
So who wouldn’t LOVE this?
Kristine’s Easy Lemony Garlicky Prawns
1 bag tiger prawns or shrimp (I used the Kirkland brand from Costco–thawed them from frozen)
Zest of 1 lemon
Mrs. Dash Lemon Pepper Seasoning
Pepper to taste
Garlic powder
Minced garlic (I used jarred)
Remove tail from prawns and skewer. Season with above. Cook on hot BBQ for only 2-3 minutes per side….they are DONE when they turn pink!!
Balsamic Asparagus
1 bunch asparagus
Balsamic Vinegar
S&P
Spray of olive oil
Take a big sheet of tin foil and fold the sides to keep the balsamic in. Drizzle balsamic, salt, pepper and small spray of olive oil over asparagus. Place on the BBQ and cook for 5-6 minutes turning once.
This is how I had leftovers today…with a tropical fruit salsa!!!
It came out so good and it was so quick and easy. Shrimp and prawns are a great protein source and very low calorie!!
Tonight I’m making some BBQ’d chicken. I have a low sugar BBQ I want to try out! Will let you know if its a keeper!
