Hope you’re having a great week so far! By popular demand, this is my first edition of “What I Ate Wednesday”.  I know many people struggle day-to-day coming up with healthy meal ideas. I do sometimes too! Its great to see what others are eating on occasion to get some new inspiration.

This morning, like every morning…starts with coffee. We have a Keurig, so I just have plain coffee with a bit of almond milk. Like most mornings, being busy with the kiddos, I always have to nuke it at least once to keep it warm. Perhaps I should just start drinking it faster!

Breakfast

I’m big on having some sort of protein for breakfast. Keeps your blood sugar stable and is a great way to start the day.

Like most mornings, I had scrambled eggs with a bit of ketchup, and gluten free toast with butter. This is a new GF bread I’m trying. Its a cheese bread by Glutino. I’m liking it! I also like that its 10 g of carbs per slice….most breads are at least 15 g carbs per slice.

After dropping my oldest at school, I proceeded to the gym with the little one. I usually take a pre-workout, lately its been Vega Sugar Free Energizer, which I’ve been liking a lot.  Afterwards, came home and had a snack.

Today was Quaker popcorn flavored rice cakes with a bit of natural peanut butter and sliced banana. Combined with a Whey Gourmet protein shake (Peanut Butter Chocolate flavor) mixed with a bit of ice, almond milk and water.

Lunch

A couple hours later I was hungry yet again. So for a 2pm lunch I had a spinach salad with a bunch of veggies (cucumber, cherry tomatoes, green pepper), a bit of goat feta, and homemade balsamic dressing (well I cheated and used an Epicure dressing mix, but added the olive oil and balsamic vinegar to it). I also had a side of homemade chicken strips and yellow mustard with a bit of stevia (to make it more like a honey mustard)

Then, a few hours later, it was time for dinner….but this Pumpkin Bar may have snuck in my belly before I started dinner 😉

For dinner, I was testing a new recipe for a Chicken, Bacon & Vegetable Penne Pasta. It turned out GREAT! Watch for it coming to the blog soon…

Before Bed Snack

Well its 7pm my time here, and my food for the day might not be done yet! If my tummy begins to rumble again, I’ll have some non-fat greek yogurt with some NuNaturals stevia drops (my latest addiction is Lemon, cause it makes my yogurt seriously taste like lemon meringue), with a bit of Nature’s Path Coconut Chia Granola on top.
