Well today wasn’t the greatest example of what a day of balanced eating looks like. I wasn’t prepared for the day. I was flying by the seat of my pants. It happens 😉

Breakfast

The morning was so busy I didn’t even snap a photo of breakfast. I was getting some photo’s done at noon, so I didn’t want to have a carb at breakfast for risk of getting bloated. So I stuck to 2 eggs, 2 egg whites with some spinach mixed in. I sprinkled it with a bit of herb salt, but didn’t use any ketchup or salsa (as those tend to bloat me a touch).

It sorta looked like this (minus the biscuit)

I didn’t do anything out of the ordinary to prepare for the photo-shoot. Many girls like to diet before shoots, but like I’ve mentioned before I don’t diet. I thought about eating a little better a few days before, but that didn’t quite happen. In between my healthy meals, I had pizza on Friday, Chinese food on Saturday, and ate out for dinner on Sunday. At the restaurant on Sunday I ordered salmon, but on the side was a loaded baked potato…but hey, at least it wasn’t fries 😉

After I dropped off my 5 year old at school, I rushed home to get ready. Thankfully my mother-in-law is in town this week, so she was able to keep my 1 year old entertained while I got ready. Goes to show why I don’t get photos done very often! Its a lot of time and prep to get ready. Plus its not like I’m a model or anything or get paid to do photos. It comes out of my own pocket, so naturally its not a top priority.  The last set of fitness-type photo’s I did were back in 2009, so I felt like they needed an update 😉 Here’s a sneak peek of an unedited shot…

On the way there I realized I forgot a snack, so I had a mini panic attack as I knew I wasn’t going to be eating from 8:00am to close to 2:00pm. Big no-no. I don’t like being that hungry.  But of course I was nervous about the photo’s so I didn’t have much of an appetite until it was done anyway 😉

Snacks

As soon as I got in the door, I ran for the freezer and grabbed a homemade protein bar

After this, an hour or so later I was hungry again of course…from skipping my usual meals. I should have had some chicken, veggies and a carb of some sort, but instead I ate popcorn, as I made some for my daughter’s after school snack…

Air popped with butter and salt. It was good.

Then before I knew it, it was time to make dinner. As mentioned, I wasn’t prepared at all today, so I forgot to take something out. I grabbed a pack of frozen turkey meat and let it thaw for about 30 minutes. Then I was scraping the frozen block in the pan making pasta sauce. Not the best method, but it worked out in the end!

Dinner

I mixed the ground turkey with 2 onions, some frozen kale, fresh mushrooms, herbs, Worcestershire sauce and 1.5 large jars of pasta sauce.

I cooked up some gluten-free penne on the side, and mixed it in with the sauce. Sprinkled on some Parmesan, and that was dinner.

Before Bed Snack

Then after dinner, I sipped on herbal tea and had my usual greek yogurt snack (non-fat greek yogurt with lemon stevia and Pumpkin Flax granola on top)

That’s all folks. Almost ready to turn in for the night…its been a long day. Will try and get a new recipe posted asap.
