Hey all! Yet another What I Ate Wednesday post.  It was a busy day of errands and cookie making. I’ve been researching gluten free cut out cookie recipes, and I’ve got a good one.  Here’s the kicker, its grain free and contains no butter or sugar. I didn’t think that was possible. They are sooo good. So nevertheless, cookies were very much included in my diet today as I can’t stop eating them!

I don’t know about you, but the closer it gets to the holidays, the more time I should probably be spending at the gym burning off these extra calories!

Rarely do I eat until I’m full, but tonight is a good example of that.

Breakfast

What I Ate Wednesday 12

I’ll admit, the Cranberry Bliss Bars were staring at me in the fridge, so I decided to include one with breakfast. Considering they aren’t that high in sugar, and a moderate amount of carbs, it was justified 😉  But I also needed some protein, so it was some scrambled eggs and egg whites mixed with a bit of hash that my hubby made the other day. The hash contained sauteed mushrooms, onions and a bit of potato. I just mixed a bit in with the eggs.  A touch of ketchup on top and it was complete!

Snack

I was on the road doing errands when it was snack time, so I came prepped with a protein bar. My “Better Than Store Bought” ones that I love. Still going through the stash in the freezer.

Lunch

Got back home in time for some lunch. I had some pre-prepped food in the fridge, so I just assembled a little meal. Rotisserie white meat chicken, roasted squash, steamed broccoli and a side of hummus (random!). I also put a bit of sweet chili sauce on my chicken as I’m obsessed with it.

Snack #2

After lunch, I got down to that cut-out sugar cookie recipe. It was a super easy recipe to make. Rolled them out and baked them for 15 minutes. Don’t fear, the recipe will be posted this week. 🙂  So naturally, I ate a couple with no icing, and then when my little one got home from school, of course we had to decorate the rest.

I couldn’t resist having a few with icing too (at least I’m honest!)

Dinner

When dinner came along,  had just gotten back from the dentist, and wasn’t really in the mood to cook. Since we rarely get take-out (maybe once every 2-3 weeks) we decided to order in sushi.

I don’t eat the raw fish (although I wish I did as its way healthier than rolls), so I tried to get as healthy as possible, but still something I enjoy. So I opted for a California Roll with no mayo, and a Beef Teriyaki Roll. Hubby likes the raw stuff, so that’s his Philly Roll on the right.  I dipped mine in a bit of hot chili sauce mixed with Bragg’s Soy Seasoning (basically a lower sodium soy sauce).  I didn’t count how many pieces I ate, but it was much more than on this plate and now I’m full.

Well at least I’ll give it my all in a killer workout tomorrow and use all those carbs for energy and muscle building!!!

Definitely no nighttime snack tonight. Filled to the brim!  But I will have a bunch of herbal tea, and call it a night before 10pm. Needing to get to bed a bit earlier these days as my 1 year old is cutting more teeth and waking up bright eyed and bushy tailed at 5:00am!
