What I Ate Wednesday #13

As I was gathering the photo’s for today’s What I Ate Wednesday post, I realized I had a great day of food and some stellar treats 😉  I’m not sure if many of you are surprised by what I eat, or if its out of the norm.  Everyone has their own normal I guess. This just happens to be mine.

Breakfast

Rather than toast with my eggs, for the last couple of days I’ve had a slice of Peanut Butter Bread.  I’m out of the gluten free bread that I really like, so I pulled some of the peanut butter bread out of the freezer.  Someone on Facebook asked whether I eat everything that I make. For the most part, yes, we eat it. I also tend to give a bit of it away to friends, and when it comes to loafs and other freezer friendly things like muffins, I usually put half of it in the freezer right off the get go.

Another condiment I use pretty much daily that I’ve never mentioned is this herbed garlic salt (brand is Epicure). Best salt ever. I always put a bit on my eggs. Today I also felt like a bit of ketchup. I used to be a Heinz only person years ago, but I’m converted to the Trader Joe’s Organic Ketchup. Love the flavor of it, and way better ingredients.

Snack #1

My post workout protein bar today was my No-Bake Pumpkin Spice Protein Bar. I think next round, I’ll try even another flavor combination. Even though I do love the original, and last batch I did I used chocolate protein powder and subbed the raisins for dried cherries.

Lunch

I had some Yummy Turkey Meatloaf leftover, so I had some of that with a side of my 20-Minute Pumpkin Soup. It was perfect for a chilly day.

After school, we headed to the mall for a playdate, and to tackle a bit of Christmas shopping. Its sort of a tradition to get frozen yogurt, so we did that. Little miss got Cookies & Cream flavor, and I got the Sugar-Free Strawberry Banana. Mine was not that good. But it was their only sugar-free flavor at the moment. At this particular place a 1/2 cup of the sugar free one is 80 cals and 5 g sugar….not too bad at all!

I also picked up these Sugar Free Werthers the other day at Walmart. I don’t eat the fake sugar stuff all that often, so its nice every once in a while. A couple here and there won’t kill me I figure 😉

Dinner

We got home at 5pm, so I was in a big hurry to get dinner ready. I had some already cooked shrimp in the fridge I had to use, so I quickly put together a pasta dish.

It was super easy! I just boiled some gluten free penne pasta (I get this one from Costco), then drained it.  Put the pasta back in the pot and I added about a half of a jar of this “Many Clove Garlic” sauce from Trader Joe’s, and a bunch of frozen kale, a bit of fresh Parmesan cheese, and the pre-cooked shrimp. It was delicious! I will definitely make it again…can’t beat a 1 pot meal done in 20 minutes. You could add in whatever chopped veggies you want. I was just super lazy with the frozen kale!

Dessert

After dinner (and to write this post), I opened up my new tea from David’s today. Gingerbread!

It doesn’t have much of a gingerbread flavor, but it does taste good. Its a rooibos tea, and I find most rooibos to have a similar flavor…even if they’re flavored…know what I mean? I find the Celestial Seasonings Gingerbread tea to have a much better gingerbread flavor.

Naturally, all this talk of gingerbread, I had to have a couple of my healthy gingerbread cookies sitting around.

With my tea I had a gingersnap, and one of my gingerbread men {recipe coming tomorrow}.

Is that it? Well I haven’t decided yet. I’ve been thinking about having some air popped popcorn with butter, so I may just do that! I’ve got a 2 hour season finale of Sons of Anarchy to watch 😉
