Its just been one of those days. Woke up this morning and had no idea what day it was. Felt like a Friday, yet its Wednesday.  Of course they are always a bit special, as they are “What I Ate Wednesday” 😉  Felt a little more rushed than normal, but thankfully I remembered to snap a picture of breakfast.

Breakfast

Today I just made some quick oats in the microwave (1/3 cup dry, didn’t measure the water). Microwaved it for about 2 1/2 mins.  On top, I put a little almond butter, and raspberry jam. I also sprinkled it with a bit of flax seeds (Omega Crunch Maple flavor). For the eggs, I just did 1 egg and 4 egg whites, scrambled, and added a bit of ketchup.

Snack

My workouts this week have been great, as I’ve been testing out the new BBH Body Assault Program. I’m so excited for you all to try it! My hubby has been doing them as well, and has also found them challenging! I think they’ll be great for all levels as if you’re a beginner, you can simply do less sets if you need to.

I made another batch of protein bars over the weekend. I did my “Better Than Store Bought” Protein Bars yet again, but used chocolate whey protein instead of vanilla, and used dried cherries instead of raisins. So so good.

I also made some tea as I felt like I needed a bit of a kick, but didn’t want more coffee. So I had some of this Tetley Black and Green Tea. Its good! You get the benefits of green tea, but with less bitterness.  I like it plain with no milk or sweetener.

Lunch

A couple hours later, I was ready for some lunch.  We had some pre-cooked chicken and veggies in the fridge, so I fixed myself a plate.

2014-01-22_lunchI put about 1 Tbsp of sweet chili sauce on the veggies, as they were steamed plain, and the chicken, I dipped in a little greek dressing that I bought (Renee’s Mediterranean Greek) It was good! My 1 year old also loved the chicken dipped in the dressing.

Snack #2

Well I wouldn’t really call this a snack…as its not exactly a balanced snack. I just need a little chocolate in my life on the regular 😉  A couple squares of chocolate. Its my little low carb chocolate stash 😉 Simply Lite Chocolate. I had a square of the milk chocolate, and dark chocolate with almonds. So good. Tastes just like regular chocolate. I have a couple squares almost daily. I’m able to be satisfied with just a little.

Dinner

We usually have dinner around 5:30, as the kids usually can’t wait much longer than that or the crankyness starts. Today was a super simple dinner, and its so so delicious.

I actually posted a video of how to make it ages ago. So check it out if you like. The only thing I did different this time, is I sauteed the polenta in a pan (vs. grilling it). I also took a bunch of thinly sliced onion and sauteed them with a touch of oil, then added a little water, a bit at a time to help them soften up and caramelize. Water actually does a great job of caramelizing the onions, you don’t need a ton of oil.

So the ingredients you need to make it is: polenta (the one in the tube), chicken (pre-cooked or rotisserie chicken), sauteed onions, goat cheese and balsamic reduction (make, or store bought).

Highly recommend it!

After Dinner Snack

Well I’m all stocked up on greek yogurt again after a Costco trip, so I’ll definitely be having some of that tonight with some stevia drops and granola. I’m sure it will resemble this…
